So I have mixed feelings about lasagna after making one for the first time. I have totally underestimated every lasagna anyone has ever served me. Making one from scratch has been eye opening. A lot of work! I can see plenty of room for improvement though. A few things from this attempt (Lasagna learnings):
1. Reduce the ragu more. The only reference I had was my bolognaise sauce where clearly the moisture content is too high for a lasagna.
2. Let it sit longer before serving. I had a bit of time pressure which meant I more or less skipped the little bit of time needed for it to “set” a little bit.
3. I can now play with the ragu to tweak flavour. I can see scope for playing with the core ragu components.
4. I didn’t have fresh mozzarella but instead used grated. Keen to see what difference this makes.
All in all the family gave me thumbs up so I will try another one soon! #foodstr
