Hi nostr, i'm happy to say that i made my first batch of beef tallow today. Its been a busy day with lots of other stuff too, but thats something i wanted to try. Its time to wind down now, and maybe sit down with a book and relax for the evening. The weather today was gorgeous, and i was able to enjoy it, doing chores and going for a nice walk earlier. I'm tired now, but tomorrow i'll share some pics of the finished tallow. I ended up with 2 quarts and 1 pint jar, but i left a little room in the jars since i'll probably freeze some. I looked up the price of grass fed beef tallow on amazon, and it was $30 per quart, so i think it was worth making my own. Mine was in the oven, covered, so maybe thats why i didnt get much smell.

I just got back a blood test saying I'm having an immune reaction to dairy, ie no butter, and coconut, ie. no coconut oil. Because of this I've been using beef tallow as my go-to oil/fat including in my sweet potato casserole for Christmas. I've missed the butter much less than I thought. I've been buying a wagyu beef tallow. I may have to try rendering my own tallow.

Wow, i would hate to have that kind of reaction to dairy. I have tried a couple different brands of store bought tallow, grass fed, all that, but the best tasting one was the sample i got from the butcher that processed our half cow. Thats why i decided to give it a try, and it wasnt too much work. In youtube i found different methods, but i just picked the one that looked simple. Did mine in the oven, covered, on low heat. Gonna try some today.

The test says I have a high immune reaction to a protein in the whey. I never had any severe symptoms. Any symptoms were very minimal. I'll give up dairy for a while, but if things stay like they are, there is no way I am giving up cheese for the rest of my life unless the reaction turns deadly. I feel almost the same with butter, although the wagyu beef tallow is replacing the butter much better than I thought it would.
