The flame comes from gas released from a bloated cow's stomach. Cows naturally produce methane during digestion through a process called enteric fermentation, where microbes in their rumen break excessive gas builds up in the stomach, creating pressure that sometimes needs to be relieved using a tube inserted by a vet. If the released gas is exposed to a flame, it burns - because methane is highly flammable in the presence of oxygen.
