Impossible to answer, but the book I've read more than twice is "The Name of the Wind" by Patrick Rothfuss.

I just wish he'd finish the series. Books one and two are so good, but he's kinda crapped on his fans, which hurt, cause I've bought several copies of both (and of The Slow Regard of Silent Things).

I agree. I’m not sure if he’s ever going to publish the third?

I would say The Malazan Book of The Fallen series by Steven Erikson. Very deep, and book 10 will blow your mind.
