This is true. The hoops we would need to jump through just to sell a few bottles of kombucha to the public is daunting. If we want to maximise the active probiotics and allow the alcohol to climb above 0.5%, it's exponentially harder. All this while most people I know have gut problems from high stress and eating too much refined food and preservatives.
