I feel like people are always trying to run before they can walk. Start with a watch only wallet set up using reputable hardware (seed signer, or coldcard).

Next, because they'll always ask how to spend, a hot wallet with the understanding that it is vulnerable to spyware and zero day hacks.

Finally, a demonstration on how to spend from the watch only wallet safely.

Now the student has a convenience wallet to feel like they can practice using bitcoin, and a secure wallet for saving with the understanding that this is a secure vault by comparison.

Its not as simple as writing down 12 words, but it isn't as complicated as multisig either.
