the best turkey ive ever had…

2 day process.

soak in salt brine overnight.

rub with fat of your choosing.

cumin, chili powder, oregano

uncovered,

30 minutes at max oven temp.

take it out, put it in a baking bag.

put it back in the oven.

12 hours at 175f

cut open bag, pull it back.

20 minutes at max oven temp.

skin is crispy, bones pull out with no effort, whole turkey breasts fall off in your hand.

Btw I’ve always been amazed that American Thanksgiving and Xmas are barely a month apart. It just feels like too much, especially with new years right after

One of my ‘murican frend said that it was cause thanksgiving was for celebrating with the larger family and that Xmas was for celebrating only with the nuclear family (parents and kids)—do you feel the same way?

Canadian thanksgiving was today, but people in Quebec where I grew up don’t celebrate it at all, although it’s an officially holiday and many businesses close on that day

I get it! Recently, it seems like another fiat holiday to me, permission to eat like gluttons and wear fat pants. I do celebrate with it (extended) family as it is culturally appropriate, and somewhat expected, in my area to do so.

This sort of recipe I can follow.
