So my question is: is this op_return duality between Bitcoin knots and Bitcoin core a fork?

In other words, if a pleb would switch to Bitcoin knots instead of Bitcoin core to avoid this op_return fiasco, does it mean that their transactions on Bitcoin knots don't get recorded on Bitcoin core?

And I guess to push this further: what if the Bitcoin knots developers go rogue?

No. This is not a concensus change, so both implementations will continue to work on the same blockchain.

If the knots devs go rogue, you will hopefully catch wind of that beforehand and won't upgrade or will switch to another client just like you are considering now.

Even if you are on a rogue piece of software, you don't have to stay on it after you realise what's happening.
