Having used all other open source alternatives, the best keyboard is still Gboard. You can use it privately by not blocking/disallowing its internet access in GrapheneOS.

You uncheck the box that says "allow network permission" when installing it. It's not available as a git download apk. If you don't have Google play services or use Google play for apps that are not available elsewhere, you can use Aurora to download it.

That's the best thing, you don't have to. If you block internet access, it can't call home. This is one of the benefits of using GrapheneOS.
