Bro, no no, practice on some old busted circuit board out of a broken gizmo.
No one is good the first time they pick up a soldering iron! You're going to need a couple of hours practise, and thats assuming you have a decent solder station and good lead-based and flux-cored solder.

not only that but I had to desolder on each pin because it was just globbing up.

I don't know. Definitely suck hard at soldering. this video above makes it look very easy.
It doesn’t have to be pretty it just has to close the circuit. Anything you mess up can be fixed by desoldering it. Just take your time. Go slow. Error on the side of too little solder and add more.

I've been soldering drones for years but still find the raspberry pi header to be a complete pain in the ass. I know my comment is too late, but I highly recommend this going forward.
