Here’s some ribeye I reverse seared Sunday night. Made crying tiger sauce with jasmine rice. Recipe below 👇

Crying Tiger Sauce:

2-3 peppers (Thai/serrano/fresno) whichever you can find or can handle

1 bunch cilantro & equal portion scallions finely chopped

1 shallot diced

1 tsp/tbsp tamarind paste

2-3 limes (squeezed)

1 tsp rice (dry, ground & toasted)

1 tsp brown sugar

Fish sauce (you can add a lot or a little depending on your tastes) start with a few tbsp and work your way up. Add more or less of the fish sauce and sugar to find the balance you like. Dice everything finely and mix up <30m before serving.

It’s kind of like an Asian style chimichurri. There’s a bunch of different ways you can make it but it’s pretty bomb with steak and rice. Throw some cucumbers/salad on the side 🫦👨‍🍳💋
