Feeling very grateful for this community, thought I’d share my recipe for winter squash muffins. A staple from the garden thru the Maine winter. #grownostr #baking #homestead
Mix:
1 cup cooked orange flesh squash purée
3 chicken eggs or 2 duck eggs
1/2 cup melted coconut oil
1/4 cup maple sugar (or your choice of sweetener)
tsp vanilla
Whisk together:
1/2 c finely chopped nut meal
1/2 c cassava flour
1 tsp cinnamon
1/2 tsp ginger
Pinch allspice
1 tsp baking soda
1/4 tsp cream of tartar
1/4 tsp sea salt
Stir dry into wet ingredients
Divide into greased muffin tins
350-375 degree oven
I have a convection oven so they take 6-8 minutes, but could be up to 18 depending on your heat source
Makes approximately 10 muffins, I usually double the recipe
