Rolling sushi is very rewarding. Would recommend. Of course, I don't handle raw fish near my food, so that makes it easier. Sweet potato, avocado, Tofutti (contains palm oil, I use it sparingly) are all good fillings.

I also love to crumble tofu and season it and air fry.

Also tofu cubes, marinated and rolled in corn starch, air fried and served with rice and some sauce made from a few ingredients. (I'd have to find the recipe lol)

Indian and Korean food are amazing too. 🔥

I havent made my own sushi in over a decade but I agree it can be rewarding. Takes time and prep. 100% on the avocado. Also like radish, celery, cucumber, carrot and imitation crab stick.
