Is there a better way to save your nsec? Should they been stored like a seedphrase?
I have mine saved in notes on my phone!! Is this terrible security or is an nsec not as risky to store?? What do others do?

Everyone should have a password manager that has secure notes storage.
Do you have to pay for that?
Proton has a free one but if you can, you should pay. Most important security tool you can have.
Password manager for me. If it ever grows big then seedplate it.
