Any idea when zaps will be active for those without strike addresses?
Not up to us. It's the lightning nodes/services that must implement Zaps.

My node is CLN so that's a no go. Could spin up LND if that can work-ish with NIP-57? Not sure.
stacker.news or vida.page also fully support zap (NIP-57) implementation. I have tried both of them.

Are you sure they were zaps and not just lightning tips?

Yep.. it's all the same. But in zaps, the receiver's lightning node/service must send a Nostr message with a receipt. If it doesn't, then the amount doesn't show up in the receiver's profile.

Some people are saying they can see them ... others can't. I still haven't been able to see them myself. #[6] says they look good.
It's either
1. some kind of encoding/escaping is happening to the zap note description between SN and the client making description hashes not match
or 2. a relay overlap issue

Stacker News and vida.page also offer Lightning Addresses with zap support right now.
Both services are custodial, though.

I think #[12] from Stacker News is fixing some issue with zaps publication. So, maybe better to wait for his confirmation that everything is working or we have to wait some time.

If you don't have access to Strike (don't live in the US) and you want Amethyst to use your own node for ZAP'n
1) vida.live and make an account with you npub... they will DM you with a pw.
LNbits is an abstraction layer (thingy) between your node and vida.live to make it work with
LND, CLN, Eclair, Spark, LNpay etc
github.com/lnbits/lnbits You will need to install this.
2) Go into settings -> integrations ->LNBits and put in your nodes LBits URL.
If you don't have your own node you can use vida.live custodial wallet for a small fee.
