Happy medium. Too many crap relays will slow you down. The more relays, the more content , more reach, and more data backed up simultaneously

Probably a stupid question, because everything is public anyways, but are there any privacy-related things to think about?

Yep. Anyone can log in with your public key (npub) and see your settings and your DM metadata, meaning anyone can see who you're chatting to. They can't see the message content though.
