just stock Ubuntu. I like playing around with linux but this machine needs to work and never break

Exact same setup here. Framework on Ubuntu. Don't forget to install the OEM kernel recommended on the Framework site, makes a difference, provides the proper drivers for everything.

I got a Framework in front of me right now. Amazing bit of kit. You made a good choice! Shouldn't take long either, fitting the M.2 and RAM and screwing it together took me like 10 mins. Super easy design.
