My Dominican people dont believe in tallow so i have to drive pretty far out
To make tallow, start by cutting beef fat (suet) into small pieces and then cook it slowly over low heat for 1 to 3 hours until it melts and becomes clear.
Strain the liquid fat through a fine mesh strainer into jars and let it cool before storing it in the fridge or freezer.

I make all my bacon at once (3or 4 packs) and refrigerate it.
Pour the lard off and store a few ounces next to your butter. It takes a month or so to go rancid. (Just cover it in case you have mice)
Tallow is available on Amazon though I get mine locally
I saw grass fed tallow at Costco yesterday. It’s around if you start looking for it
