The charcoal didn't burn evenly so it missed out on a lot of the Hickory chips.

The best brisket I've done was an accident. Mixed up Celcius and Fahrenheit and cooked it really hot for the first 45 mins. Finished it off real low. The bark was great 👨‍🍳
