68hrs fasted and struggling to do math or type now ๐Ÿ˜†

Brisket has been wrapped in baking paper and then foil. It's in the oven on a chopping board as low as it goes (about 90โฐC). I'll flick it off in an hour & let it cool slowly.

I'm not happy with bark/colour on the outside. I think it's because of the tray of water underneath. A little too moist to take on much colour. I'll eventually get a decent offset smoker & give that a go. The Kamado is great but it's hard to do pork crackling & hard to get a bark on brisket.

I've opened the vents up in the Kamado and the potatoes are in. Looking forward to it all!

Offset guy, my guess is the same, too moist to bark, but I bet it tastes amazing anyway. If it tastes good, it was successful.

The charcoal didn't burn evenly so it missed out on a lot of the Hickory chips.

The best brisket I've done was an accident. Mixed up Celcius and Fahrenheit and cooked it really hot for the first 45 mins. Finished it off real low. The bark was great ๐Ÿ‘จโ€๐Ÿณ

I had my fill but it wasn't as good as I'd hoped. It needed longer - it was a little tough. I covered it & put it back in the oven.

Just ordered a wireless thermometer.
