If any of them get way too big (and some will, despite your best efforts), do this:
# Zucchini Pasta Sauce
Way-too-big zucchini
Olive oil
Jalapeño, seeds removed
Salt and pepper
Lemon juice
(Sorry, this recipe doesn’t really have amounts.)
Cut zucchini in half lengthwise and scrape out the seeds. Cut into manageable lengths, 8” or so. Brush with olive oil and season with salt and pepper.
Get your BBQ raging hot and grill the zucchini until soft and slightly blackened.
Blend zucchini in food processor with jalapeño, more olive oil, lemon juice, and salt and pepper to taste. Blend until smooth.
Serve over pasta. I like linguini, but you do you.
If you make too much, can the sauce in mason jars for the future.
