Does anyone have a simple setup for a self-hosted email server?
I'm tempted to start with postfix and dkim and all that stuff, but I wonder if there is a better/simpler way to do this?

Try with #OpenBSD. I have mine running for many years not a single problem. And very good with the spam

I use Postfix with Dovecot, has been working great for many years.
Not all ISPs will let you set an rDNS record for your public IP, without it you might get somewhat increased spam rating for outgoing mail.
