Humans have some resistance to prion disease from eating other human brains like kuru, due apparently to widespread cannibalism in pre- historic humans. Sadly no resistance to the cow version because cows wouldn't do that in the wild.

As Illithids must infect brains to reproduce, it seems likely that they'd have evolved some resistance but it's hard to be sure.
