Spotted this recipe on my aunt's fridge last Thanksgiving. Easy and so delicious! I reduced the sugar to 1/2 c and added 1/2 tsp cinnamon. Seems ripe for adaptation! Maybe golden raisins or currants?

1 c chopped dried apricots

2 c all purpose flour

3/4 c sugar

1 tsp baking soda

1/2 tsp salt

1 egg

1 cup plain Greek yogurt

1/2 cup melted butter

2 tbl milk or oil

Heat oven to 350 F.

Line or grease muffin pan

Bring 2 c of water to a boil. Turn off heat and soak apricots.

In a large bowl, mix dry ingredients.

In a medium bowl, mix wet ingredients.

Add wet to dry and mix until just combined.

Drain apricots and fold in. Batter will be *thick.*

Fill muffin cups about 3/4 full. Makes 12 muffins.

Bake 20-24 min until tops are golden brown and toothpick in center comes out clean.

Enjoy!! I can also imagine these being amazing with a cream cheese-based icing (like for carrot cake, my personal favorite)...
