We are ordering a whole pig for butchering. Are there any special cuts we should be looking at? Or just go with a standard cut?

Also, shoulder steaks can be pretty fantastic. Grill them up and serve with a tropical salsa (like a pineapple mango type that you'd find for a fish taco recipe)
