The obvious benefits of using Alby/Primal wallet is not having to commit a ton of sats to use lightning network, and is essentially free to use.

How many sats should a person take the jump to a self custody lightning wallet like Mutiny/Zues with? The obvious downfall here is starting to pay fees, and risk of loss via being an idiot. What are the main reasons a person would want to do this? Asking for a friend who has no real places to spend bitcoin at the moment.

all depends if someone is Zap-daddy like JD

for new comers - small users minibits is best for now.

Who controls the keys to alby/primal wallet - is it you or the service?

Amount depends on whatever you are comfortable with or need regularly. You can spend sats online.

I just use my lightning wallets as I would a physical one. I don't keep more than 300,000 sats on it. If I lose it or if it is stolen, it would suck but I wouldn't lose sleep over it. I use my wallets as spending money to buy stuff from merchants who accept bitcoin.

If the wallets were to be used as a way to stack sats, until it is a meaningful enough amount to hold in a utxo on the timechain, then I would get a self- custody one.
