I use Gboard on GrapheneOS with network permission off. I can swipe, type fast and no information is sent anywhere because it can't access network.

I'm reacting to the fact that you recommend a keyboard for privacy, I'm reacting that using a very comfy keyboard with fast typing and network permission off gives you privacy as well.
So I give different recommendation on Graphene. I've seen that you said that it's ok.
I'm not a fan of Unexpected for it's lack of word completion. Very impressive keyboard, and I do love it, but that's a dealbreaker for me.
Maybe I just nees to type mkre accurately! 🤣
