And it ignores the fact that OP_RETURN is great for preventing UTXO bloat and makes the lives of node runners easier.

OP_RETURN can be discarded (unlike bare-multisig) and the user pays the full price for it (unlike inscriptions).

Do you know what .conf settings I need to discard the op_return data ?

To remove them or not accept them at all?

If you mean to remove them after verification, that’s already the default behavior of Bitcoin Core.
