Hmm. It's from a Sourdough culture that we have been running for a couple years. We generally keep the culture in the refrigerator. We feed it water and milled wheat every so often.
Instead of making a full loaf, we divide into thirds for bread bowls. 2 x a Sourdough recipe, you get 6 bread bowls.
I need to check with the boss, but I think we use 50% King Arthur flour and 50% hand milled red wheat berries when we make bread for this recipe
