Simplest way would be some chonky caster wheels, they make some that I’d give a go off pavement. Alternatively, piece of iron pipe and a couple of those solid rubber wheel barrow wheels and some U-bolts

The issue is being able to lower the whole thing back to the ground.

If you do those static on one end and the swivels on the other, then just use chock blocks to keep it from moving, give the chickens a little ramp on a hinge for when you move it.
