Yeah a restarunt I went to recently had something that they pierced the bottle with and allowing a small amount of champagne to be poured without any air getting into it. I guess it works for some venues that people only buy a couple of glasses.

But...🤔... omce it's opened or punched doesn't that let in air no matter what to begin the chemical breakdown process? Note to self.. find wine maker friend here that knows stuff
Yep as soon as you expose the wine to air which contains 20% oxygen then game over. Oxidation begins immediately. So essentially your wine starts to rust
