Haha. That’s the short rib cut. First time ever doing it this way. I overcooked em a little. They cooked waaay faster. Pork ribs came out perfect though.

This is how the Argentinians do it and the Vietnamese. Probably some other surrounding areas too. I definitely didn’t ask for them cut like that. Just checked the short rib box on the whole cow. I have noticed that the grass fed, grass finished cuts are way smaller than what most are used to.
