I think any AI that isn't air-gapped is probably far from private at this stage
Local ones should all be suspected to contain backdoors, and cloud ones should all be suspected to fingerprint all users successfully

You'd have to set aside a computer nowhere near any internet connection and run the AI on that without ever letting that system connect to the internet again. Keeping that system disconnected is called air-gapping.
Encrypting the data you send to a chat bot online might help build towards a future where the chat bot can't ID you, but we're not there yet
