Security. The node will be exposed to your local network and depending on app and settings choices, the Internet / TOR. Umbrel’s security model assumes the local network is secure which is not true by default.

It’s best practice to have a Bitcoin only node and another for other stuff and testing.

Not necessarily another network, just don’t use an Umbrel for primary Bitcoin and the other app offerings. You can have Bitcoin Core installed, with lightning for testing. Just don’t keep your whole stack on it. Small amounts for testing only.
