Great find. Will you eat fresh or make jam? We ate elder berries on a canyon hike last weekend and there really is nothing better than a wild, free snack.

These will be enjoyed as a fresh treat. Usually I like to make jam in attempt to enjoy the berries over a longer period of time but nothing quite tastes like fresh especially wild!

Wow! Elderberries while on a hike! That sounds nice. How do they taste? I have yet to try them but I’d really like to get some elderberries to make an all natural syrup to boost immunity.

They are a bit astringent and not very sweet; jams are a popular way of eating them because they need the sugar. But they have a good flavor, and the slight sour taste is enjoyable, a slight pucker on the cheeks.

I can imagine it from your great description! The jams I make are sugar free although sometimes I sweeten them with a monk fruit sweetener.
