Yeah that’s what I thought as well

I run some small text models on similar hardware, but I've never tried image gen.

Other option is Mac mini m1. Most probably faster but it’s the daily driver

While this runs, is there enough juice for other processes to run as well, in your opinion?

Yeah you should still be able to do basic stuff like web browsing etc. The more ram the better though.
