I have made it! I love the one at Bazaar Meats in Las Vegas and tried to copy it, but it wasn’t nearly as good and I don’t know why.

I’ve got my “place” for it too. They do bison tartar as well.

Have you had moose ribs? My grandmother makes the best moose ribs. Maybe I’ll ask her to make a tartare and see what she comes up with :)

The only moose meat I have had is ground. I have a patient who is a big time hunter who brings me some when he has it. Makes a great chili. How are the moose ribs compared to pork or beef. My favorite game meat is elk. We love it do much that I bought my husband a guided elk hunting trip for Christmas even though he has never hunted before 😬

That’s awesome. You’re husband will have an amazing time. Where’s he going? Moose steak and moose roasts are good, but gamey and tough. Really hard to soften them up, but the ribs are amazing. Not as fatty as pork and gamier than beef but still super soft. If you can get your hands on some, we never gives ours up :), let me know and I’ll send you a recipe.
