I want to learn to make it out of raw milk at home. The only improvement I can think of would be to have the live active cultures there rather than a product pasteurized to meet industry regulatory requirements. I’d sell it too, but the regulations surrounding public food sales are ridiculous and seemingly designed to keep small scale producers out of the market.

I’m probably holding myself back here with concerns, it wouldn’t be the first time…but here goes. If I make meat and dairy products, and if someone gets sick, from the products or not and claims my products made them sick, I don’t have the certified facility and licensing to help protect me from a devastating lawsuit. Cavalier is an option when you’re 20 and have nothing to lose, but I’d be taking risks with the farm and the well being of my family. It’s a lot of risk for a little profit.
