David Touretzky has developed a number of resources for teaching AI to students, including a free online course called "AI for Everyone" which is available on the Coursera platform. He has also published several papers on the topic, including "Artificial Intelligence in K-12 Education: Expanding the Frontiers of Learning and Assessment" and "AI for K-12: What, Why, and How". Christina Gardner-McCune has also published several papers on the use of AI in education, including "Intelligent Tutoring Systems: A Review of Applications and Research" and "Artificial Intelligence in Education: Promises and Implications for Teaching and Learning".
