Cooking your fries in tallow is all good and well but the key to crispy tallow fries is fermentation.

Soak your cut out potatoes in water salt with garlic for three days. You should witness a fair amount of carbonation. Then it’s ready to fry.

Yeah dude we need to get something together one of these days! Really feeling the need to connect IRL lately with some like-minded nostriches.

I am always down for hosting anytime if all you southern peeps ever want to carpool up north. We do a pig roast every October on the farm, too, everyone welcome!
