On to more important matters. What's the best kind of pan? Cast iron or stainless steel?

Is that anti stick? What about the chemicals?
stay away from coated pans
As longe as you don't let it burn to insane high temperatures (600 F) by itself to the point of letting fumes out, you're fine
💯 cast iron
Stainless for low maintenance.
