Sounds very plausible, but maybe GM grain and GM yeast can also play a role.

For sure. Complex issue but there was something I read not so long ago that finally lit the bulb for me. Gut microbiome is extremely important for health and immune system. Intolerances are connected to immune system. Glysophate has now been proven to impact bacteria in the the gut. It seems to make a fairly rational picture but agree more research reeuired

I agree completely with the importance of a healthy gut microbiome. I'll look into the effects of glyphosate on gut bacteria. I can't eat commercial bread at all; I develop a skin rash on my forearms. So, I'm experimenting with sourdough bread baked with wild yeast, and so far, I'm not developing the skin rash.

I've observed that initiating a sourdough starter is challenging with many flours claiming to be unbleached. I'm curious if glyphosate could be a factor, potentially harming the natural yeast and bacteria.
