So this weekend we found out whether it's worth spending a day and a half and nearly $30 in beef tallow to cook $7 worth of chicken thighs. The answer is yes, yes it is.

Dry brined chicken thighs in Real Salt for 8 hours. Then dusted with Meat Church BBQ Holy Gospel. Then smoked at 200 for 2 hour. Then confit in wagyu beef tallow at 180 for 12 hours. Then taken out and chilled in the fridge. Then I crisped them up on the grill.

Absolutely delicious.
