I haven’t used GrapheneOS so I’m ignorant. But I assume some apps are not available or don’t work as well.

I don't think that's an accurate assumption
I’m happy to hear your thoughts. I’m assuming a “de-googled” environment like AOSP without GAPPS, then a subset of apps either don’t work at all on AOSP or have issues. I was just listening to a video by Rob Braxman and he mentioned instances of apps not working. For example, Uber, which relies on tracking, would be limited to tracking while using the app—of course this is a good thing for privacy but their code (Uber’s) may not function well. Also, I have a Tesla. Would the Tesla app work in AOSP only? I need to go through all the apps I use and see whether to ditch them or find alternatives.

Interesting, that sounds like a good solution. I’ll have to read more about the profiles idea. I originally wanted to completely “de-Google” but I think some compromise must be accepted depending on what apps one “requires”.
