Beef massaman. Slow-cooked beef shank until it’s tender and melts like butter, rich with coconut milk, and soft, warm potatoes in every bite. Used a pre-made curry paste I got from a lovely gramma. Made some roti to mop it all up, and of course served it with jasmine rice—because we don’t mess with the classics.
