Are you on GrapheneOS or stock android?
I'm on a version of lineage os (Iode)
GrapheneOS let's you do granular permissions per app, so I keep network (and basically everything else) turned off and capitulate to using Gboard. Maybe it's doing some interprocess communication spying, but I dunno...
That's the other route I could take on lineage. Use gboard and then deny network access.
