I've tested both LNDRest and another LNtips instance without troubles.
Having said, I've never heard anyone complaining about any funding source being unreliable. The coupling with the funding is rather simple: get invoice, pay invoice. If you get the networking in place correctly, there isn't really much that can go wrong.
I'm playing around with various plugins, scrubbing and splitting payments, and it doesn't always work. Not sure if it's the plugins or the backend.

Is the connection between your LNbits and your funding source running on clearnet or Tor?
I had so many problems with tor for this use case that I just deemed it as completely unusable.

LndRestWallet is my choice

I’ve built a Layer 3 Lightning payment clearing engine using private instance of Cashu w/Postgres, LNbits w/Postgres and LND. The goal is a nearly untraceable payment and clearing system sitting on top of Lightning. Still very experimental but promising. It works. Have implemented NIP-05 and NIP-57. Not much to look at but it works. Now focusing on making it production grade. You can read more here:

LND. Using caddy instead of nginx for reverse proxy made a big difference for me.
