Is there a clean version of Debian that doesn't include all these extra apps I don't need?

You can omit "standard system utilities" (or something similar) when you go through the installer and it will be VERY small. Then you can add the utilities that you actually need.

I think that will still add all the game, no? It seems that the only option is to install without Debian desktop environment

Yeah, I was suggesting to uncheck everything on that screen. No desktop environment, no nothin'
