When bitcoin is open-source, what stops people from making more bitcoin-like coins?
Nothing. In fact, they've done it multiple times.

You can, nobody will follow though. Bitcoin Cash, BSV, Dogecoin, all BTC forks.
The thing is, once you start the new chain, who's gonna run the nodes and miners for the new chain, when they can ignore you and keep running Bitcoin?
