As a fellow paid Proton user, what are your concerns?

Not your server, not your rules

Going international means yourv emails are automatically collected and scanned. Keep your traffic within your home country as mich as possible.

How are they scanned if it is E2EE? Unless we have reason to think Proton has a back door.

Why would the US government limit encryption strength, and outlaw stronger encryption on international Internet data?

I'm assuming it's because they know how to crack up to the limit, and probably much stronger by now.

Research at-rest and in-transit encryption.

Pretty sure self hosted email servers are on the auto spam list

All the "experts" also told me that

How much of a hassle is it? Does it “just work”? Are multi user business and admin use cases supported?

After setting it up your IP will be in some IP blocklists. You can see it all from yunohost diagnosis interface, after removing it works fine without hassles. Yes multi user and admin cases

My email works fine almost everywhere

Deliverability tanks with self-hosted. Sad, but true.
